Cornbread Recipe:
So, I tweaked (a lot) the cornbread recipe in HH
Here’s the recipe for the bread pictured above:
1 c cornmeal
.5 c corn flour
.25 c whole wheat pastry flour
.25 c whole grain rye flour
1T baking powder
.5 t salt
1 c Unsweetened Vanilla Almond Milk (Trader Joe’s) w/1 tsp lemon juice
.25 c butternut squash puree
.25 c maple syrup
Raw sugar for the top.
Instructions:
Mix the dry in one bowl, mix the wet in another bowl (make sure you mix the milk and juice ahead of time and let sit for a couple of minutes). Mix it all together - but not too much, if you beat your batter too much, you’re gonna get a brick. No brick! Anyways, put in a pie dish (or anything else you want) and put in a 400degree F oven for 20 min.

I crave the cornbread, I make the cornbread, I eat the cornbread.

Vegan it is, no added fat it has, raw sugar sprinkled on half

Oatmeal Cookie Granola Bars
I used a couple of different recipes for oatmeal cookies, veganized them, and made a couple of substitutions and augmentations - kind of made it up as I went along. And, it worked! They are really good!
What in ‘em:
Whole Wheat Flour, Whole Rye Flour, Oats, Shredded Wheat Cereal, Raisins, Chocolate Chips, Sunflower Seeds, A Flax Egg, Raw Sugar, Cinnamon, Almond Butter, and Peanut Butter. Oh, and little baking soda.
Yep - snacks for my son.

I had never made the beer bread before - it is *really* good.
Dinner Bowl:
It’s a mess, but it’s a delicious mess: Brown rice, farro, kale, chick peas, bell pepper & parsly from my garden, cucumber, and green onion topped w/roasted pepitas, EHH’s Cesar dressing, and siracha. MMMMMmmmm!
