Whoa.  I wish this were my supermarket….It’s like a smorgasbord of tofu/vegan meat displayed so neat and pretty.

My sweetie was in the mood for fettuccine alfredo tonight, so I figured it was a great opportunity to try out the vegan recipe for this dish in the HH (Happy Herbivore) cookbook!  I had most of the ingredients, but needed a couple spices and some silken tofu (for the sauce) so off to the store I went.  
I was disappointed to find that Target, where I typically do all of my grocery shopping, only carries a very limited supply of tofu (none of which was silken).  I was beginning to think I was going to have to drive 20 minutes away to Earth Fare for this ingredient.  Then… While picking up the fettuccine noodles in the pasta isle, I overheard a girl telling her family (I assume) about a balanced meal she makes using brown rice protein flour.  Thinking this sounded like a rather vegan dish, I approached her and asked if she knew where I could find some silken tofu in the area.  It turns out she was a vegetarian, and suggested I tried the Harris Teeter around the corner.  
I was very pleasantly surprised to find that my local Harris Teeter not only carried silken tofu, but they were also very well stocked with many vegan dairy alternatives such as vegan cheese, mayonnaise, sour cream, etc.  Jackpot!!!

Pan Cake-n!

Pancakes for Dinner (last night’s)

Whole Grain Pancakes - mine has fluffy nut, toasted almonds, apple, and maple syrup on top.  My son’s has apple sauce, vanilla syrup, and toasted almonds. Yum!

Dinner

I stuffed blanched cabbage leaves with portabelloes, leeks, farro, and red beans.  I then baked them with some marinara (a la Happy Herbivore).    Yum!

Vegan Parm

My son loves this stuff.   See link for recipe.  What I did differently: reduced salt to 1/2 t since nuts were already salted.  I added 1/2 t onion powder - because it tastes goouuud.   For dinner I made Farro with homemade marinara sauce - my son put a ton of the parm on top.   Which is great, since it’s so damn healthy.

I don’t normally do the “fake” cheese - just because I usually like to keep to a more whole foods/low process fair.  *But* I have been craving the ooey-gooey-type-yummy-pizza and this certainly hit the spot.   It was so good!

Pumpkin Pie Vegan Yogurt
I am super excited: I took my normal EHH tofu yogurt recipe and tweeked it to be Pumpkin Pie yogurt for tomorrow’s breakfast…..and it tastes really, really good.   I have to share!!!!!
Recipe:
1 container Mori Nu (I use low fat)
1 banana
5 T canned pure pumkin
2-3 T maple syrup
juice of 1 lemon
1 t Pumpkin Pie Spice (I like the one from Trader Joe’s) 
I blended it with my immersion stick blender, but a normal blender works just as well.
Yay!

Pumpkin and Grilled Veggie Tacos

Ohhh, yeah - taco night is back!   Since the weather here is still so nice, I was in the mood to fire up the BBQ.   I grilled pumpkin, onions, peppers, and yellow squash.   Put all that in a taco with red beans (from scratch), cheeze sauce (a la Happy Herbivore), and salsa.    Mmm, mmmm, mmmm.    Summer grilling meets fall flavors.   Yum.
