My chard is charding on my deck. This has got to be one of the lowest maintenance garden plants, ever! I pretty much ignored it all winter, and it keeps growing, and I get to eat more yummy chard.

Cranberry Jalapeño Salsa
I had 1 or 2 onces of fresh cranberries left over (the rest went into a cake) and my Jalapeño plant has been super productive…..so, why not? I put those two ingredients in the mini chopper along with 1 green onion, some lemon juice, and a little salt. I like it! A little odd, but I like the combination of the tart w/the spicy. And it tasted good on my Nacho Dinner.

I cooked it for lunch w/kale and radish greens (from yesterday’s Farmers Market trip).
I used to *hate* dark, leafy greens when I was younger, and now I can’t get enough. I adore kale, beet greens, chard, spinach…..on and on. So glad I like it all now - they all taste great and are super healthy.
Tale of Two Lunches
Pepper harvest from my deck-a-garden got turned into a pepper chopped salad/salsa that I put on a larger salad of romaine, tomato, chick pea patty, and Roasted Pepitas.
The Roasted Pepitas really are quite magical: they taste amazing on any salad, most soups, and they are great for snacking.
Anyways, sometimes my son and I eat different things, so he opted for Veggie Pot Stickers (a la Trader Joes) and nuts.
I’ve started using this type of set-up in my garden - it works well.

Everything Vegan Burrito
This is similar to all my taco posts…..but it just has like everything I had around the kitchen.
I grilled veggies and mushrooms (some veggies from my garden) and put it in a burrito with vegan chorizo (homemade a la Happy Herbivore), queso sauce (also HH), salsa, chipotle Tabasco, and shredded cabbage. Yummy Lunch! For dinner? Waffles, of course!
