Happy Herbivore Abroad: Interview and Book Giveaway

First, let me say Lindsay Nixon’s third installment in the Happy Herbivore series is awesome.   The recipes are easy, the food is wholesome and real, and the dishes are full of flavor.    Her books have changed the way I eat and how I live my life.   I am grateful.    After the interview, please find instructions about the giveaway of a copy of HHA.

My interview questions for author of Happy Herbivore Abroad, Lindsay Nixon:

Q:  What is the biggest challenge to eating a whole foods, herbivore diet?

A:  Patience. It’s not always the most convenient, but it’s always worth the extra effort.

Q:  How can you eat healthy on a budget?

A:  I’ve written about half a dozen blog posts on this topic! Try the search bar on’s blog :) 

Q:  What are the health benefits of an herbivore diet?

A:  Oh. my. I could write a book on the benefits — you can prevent and reverse most diseases (cancer, type 2 diabetes, heart disease — just to name a few big ones) and other medical issues. I highly recommend checking out the “Herbies of the Week” column on’s blog (click the “Herbies” label). You can read inspiring stories of people who totally changed their life and health by adopting a plant-based diet.  

Q:  What is your least favorite food?

A:  I don’t do eggplant. 

Q:  How do you deal with social gatherings where there aren’t any vegan/herbivore offerings?

A:  I plan ahead — either contacting the host or party planner to tell them of my dietary restrictions, or call the restaurant ahead (and check out the menu) to make sure there is an option for me… I often eat before events and pack a snack with me “just in case” too. Social gatherings are usually about being social for me — not the food. 

Q:  What’s your favorite recipe from your new book, Happy Herbivore Abroad?

A:  Asking a chef to pick their favorite recipe is like asking a parent to pick their favorite child :) 

Q:  I get this question a lot: “Where do you get your protein?”    How do you answer this question?

A:  Where do you get your fiber? 

Q:  Can you explain how a whole foods, vegan diet can help maintain a healthy weight?

Q:  Can you tell us what inspired you to write your latest book, Happy Herbivore Abroad?

A:  I’ve always been a jet-setter, a girl on the go traveling constantly, but most notably, I spent the last year living abroad on a small French and Dutch Island, then bounced around mainland Europe for a few weeks. I’m celebrating my lifestyle, and those travels, in my new book.
